Log machine - DESERTA 2000

Deserta is a machine for production of longitudinal ice cream cakes, commonly known as “logs” or even “swiss rolls”, not necessarily, in this case, with sponge cake content. In case of Deserta, the main production method is horizontal extrusion of an ice cream block most often in one, two or three colours in different arrangements and its decoration - top, side, with ice cream or topping, like caramel, fruit or chocolate sauce. Chocolate can also be sprayed, forming a kind of icing. A form of making the product more attractive are pencils of caramel or jelly inside, or crumbles, like nuts, almonds, chocolate chips on the top. The log can also be dry-coated or even fully enrobed, after transfer to an enrobing section.

ATTENTION: Deserta is available in two versions – for work with plastic trays and for work with paper from a reel, which forms trays when cut according to the log desired length. The basic difference between the versions is the cutting system. In case of the version for plastic trays – “hot wire” cutting, in case of the version for paper from the reel – cutting knife – the paper is cut together with the ice cream. The paper needs to be high quality and anti-moisture-coated. The advantage of the reel-paper solution is the possibility of the log’s length changing without any mechanical machine modifications and the necessity of ordering different tray sizes.
